Our recipe this month features Tomatoes, which we are going to use to make Baked Tomatoes. This simple recipe is a family favorite that I remember making for family gatherings. I grow my own tomatoes for a sauce but they all ripen at the same time, so here is another recipe I look forward to this time of year. It is a great vegetable to serve for dinner.
Ingredients:

2 Beefsteak variety tomatoes (or whichever you prefer)

½ cup Italian style breadcrumbs

3 tsp dried or fresh parsley chopped

1 Tbs parmesan cheese

2 ½ Tbs olive oil

Pinch of salt and pepper
Directions:

Cut Beefsteak tomatoes in half.

Place four pieces on cookie sheet.

Combine the rest of the ingredients in a bowl and place equal amounts on tomato halves.

Bake in a preheated oven at 350 degrees for 5 minutes.

You want the tomatoes to still be firm.

Place under broiler for 1-2 minutes to toast the breadcrumbs on top.
